Simple recipe for avocado egg salad:


- 2 avocados

- 4 hard-boiled eggs

- 2 tablespoons mayonnaise

- 1 tablespoon Dijon mustard

- 1 tablespoon lemon juice

- Salt and pepper to taste

- Optional toppings: chopped green onions, diced tomatoes, or sliced spring onions


1. Slice the avocados in half lengthwise and remove the pits. Scoop out the avocado flesh into a mixing bowl.

2. Coarsely chop the hard-boiled eggs and add them to the mixing bowl with the avocados.

3. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, and lemon juice.

4. Pour the dressing over the avocado and egg mixture and gently combine, mashing the avocados slightly with a fork. Make sure not to overmix as you want the salad to have some texture.

5. Season with salt and pepper to taste. Adjust the seasoning according to your preference.

6. If desired, add optional toppings like chopped green onions, diced tomatoes, or sliced spring onions for added flavor and crunch.

7. Serve the avocado egg salad on toast, in a sandwich, or over a bed of fresh greens.
