Recipe for making classic Eggs Benedict:


- 4 English muffins, split and toasted

- 8 slices of Canadian bacon or ham

- 4 large eggs

- Hollandaise sauce (recipe below) 👇

- Chopped fresh parsley or chives for garnish 

- Salt and pepper 

Hollandaise sauce recipe 👉

- 3 large egg yolks

- 1 tablespoon freshly squeezed lemon juice

- 1/2 cup unsalted butter, melted

- 1/4 teaspoon salt

- Dash of cayenne pepper 


1. Start by preparing the Hollandaise sauce. In a heatproof bowl, whisk the egg yolks and lemon juice together until well combined.

2. Set the bowl over a pot of simmering water (make sure the bottom of the bowl does not touch the water). Continue whisking constantly until the mixture thickens, about 3-4 minutes.

3. Slowly drizzle in the melted butter while whisking vigorously until the sauce is smooth and thickened. Remove from heat and season with salt and cayenne pepper. Set aside and keep warm.

4. In a large skillet, cook the Canadian bacon or ham slices over medium heat until lightly browned. Remove from heat and keep warm.

5. Fill a large saucepan with water and bring it to a boil. Reduce the heat to a simmer and add a tablespoon of white vinegar.

6. Carefully crack an egg into a small bowl, then gently slide it into the simmering water. Repeat with the remaining eggs, swirling the water gently to help the eggs hold their shape.

7. Poach the eggs for 3-4 minutes or until the whites are set but the yolks are still slightly runny. Remove them from the water using a slotted spoon and drain on a paper towel.

8. Assemble the Eggs Benedict by placing a slice of Canadian bacon or ham on each toasted English muffin half. Top with a poached egg, then generously drizzle the Hollandaise sauce over the eggs.

9. Garnish with chopped parsley or chives, if desired. Season with salt and pepper to taste.

 👉 If you prefer, you can also add a layer of smoked salmon between the bacon and poached egg for variation.
