 Simple recipe to make classic French macarons:

Ingredients:

- 1 cup powdered sugar

- 3/4 cup almond flour

- 2 large egg whites

- 1/4 cup granulated sugar

- Gel food coloring (optional)

- Filling of your choice (e.g., ganache, buttercream, jam)


Instructions:

1. Sift the powdered sugar and almond flour together into a bowl to eliminate any lumps. Repeat this step twice, if necessary.


2. In a separate bowl, use an electric mixer to beat the egg whites on medium speed until they become foamy.


3. Gradually add the granulated sugar and continue beating until the mixture reaches stiff peaks. At this point, you can add gel food coloring if desired and gently mix until evenly distributed.


4. Now, add a third of the almond flour mixture to the beaten egg whites. Fold the mixture gently using a spatula until well combined.


5. Repeat the process with the remaining almond flour, folding until the mixture becomes smooth and shiny.


6. Prepare a piping bag fitted with a round tip and fill it with the macaron batter.


7. On a baking sheet lined with parchment paper, pipe small circles about 1 inch in diameter, spacing them approximately 1 inch apart.


8. Once the macarons are piped, tap the baking sheet gently on the counter a few times to release any air bubbles. Allow the macarons to rest for about 30 minutes until a skin forms on the surface. This step is crucial to achieve the signature smooth macaron shells.


9. Meanwhile, preheat the oven to 300°F (150°C).


10. Bake the macarons for around 15-18 minutes until they have risen slightly and developed feet (the ruffled edge at the bottom of each cookie).


11. Remove the macarons from the oven and let them cool completely on the baking sheet before attempting to remove them.


12. Once cooled, pair the macarons shells with ones of similar size.


13. Fill a piping bag with your desired filling and pipe a small amount onto one macaron shell. Gently press the matching shell on top to create a sandwich.


14. Allow the filled macarons to rest in the refrigerator for at least 24 hours before serving. This resting time helps to meld the flavors and textures together.
