Recipe for Hainan chicken

 Recipe for Hainan chicken:


- 1 whole chicken (about 3-4 pounds)

- 2 tablespoons sesame oil

- 2 teaspoons salt

- 1 tablespoon ginger, minced

- 1 tablespoon garlic, minced

- 4 cups chicken broth

- 2 cups jasmine rice

- 4 cups water

- Soy sauce, for serving

- Sliced cucumbers, for serving

 Dipping sauce:

- 3 tablespoons soy sauce

- 1 tablespoon sesame oil

- 1 tablespoon ginger, minced

- 1 tablespoon garlic, minced

- 1 tablespoon sugar


1. Rinse the chicken thoroughly inside and out. Pat dry with paper towels.

2. Rub the chicken all over with salt and sesame oil, inside and out.

3. Stuff the cavity with half of the minced ginger and garlic.

4. In a large pot, bring the chicken broth to a boil. Carefully lower the chicken into the pot.

5. Reduce the heat to low and cover the pot. Simmer for about 40-45 minutes, or until the chicken is cooked through.

6. While the chicken is cooking, rinse the jasmine rice under cold water until the water runs clear. Drain well.

7. In a separate pot, heat 2 tablespoons of sesame oil over medium heat. Add the remaining ginger and garlic, and sauté until fragrant.

8. Add the rice to the pot and stir to coat it with the oil, ginger, and garlic mixture. Cook for a couple of minutes.

9. Add 4 cups of water to the pot and bring to a boil. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and all the liquid is absorbed.

10. Once the chicken is cooked, remove it from the pot and let it rest for about 10 minutes to cool slightly.

11. To make the dipping sauce, whisk together the soy sauce, sesame oil, minced ginger, minced garlic, and sugar in a small bowl.

12. Carve the chicken into serving pieces.

13. Serve the Hainan chicken with jasmine rice, sliced cucumbers, and the dipping sauce on the side. You can also drizzle some soy sauce over the chicken for extra flavor .
