Recipe for Indonesian Lamb sate :



Ingredients:

- 1 pound (450g) lamb meat, cut into bite-sized cubes

- 3 cloves garlic, minced

- 1 tablespoon grated ginger

- 2 tablespoons soy sauce

- 1 tablespoon sweet soy sauce (kecap manis)

- 1 tablespoon vegetable oil

- 1 tablespoon brown sugar

- 1 teaspoon ground coriander

- 1 teaspoon ground cumin

- Juice of 1 lime

- Bamboo skewers, soaked in water for at least 30 minutes


For the Peanut Sauce:

- 1 cup roasted peanuts, unsalted

- 2 cloves garlic

- 1 teaspoon tamarind paste

- 2 tablespoons sweet soy sauce (kecap manis)

- 1 tablespoon soy sauce

- 1/2 teaspoon chili powder

- 1/2 cup hot water


Instructions:

1. In a bowl, combine minced garlic, grated ginger, soy sauce, sweet soy sauce, vegetable oil, brown sugar, ground coriander, ground cumin, and lime juice. Mix well.


2. Add the cubed lamb into the marinade and coat thoroughly. Allow the meat to marinate for at least 1 hour or overnight for more flavor.


3. Preheat your grill or grill pan over medium heat.


4. Thread the marinated lamb onto the soaked bamboo skewers. Ensure they are not tightly packed to ensure even cooking.


5. In the meantime, prepare the peanut sauce. In a blender or food processor, blend the roasted peanuts together with garlic, tamarind paste, sweet soy sauce, soy sauce, chili powder, and hot water. Blend until smooth. Set aside.


6. Grill the skewers for about 4-5 minutes on each side or until the lamb is cooked to your desired doneness.


7. Serve the Lamb Sate with the peanut sauce on the side, along with steamed rice and cucumber slices.
