Recipe for pandan cake


- 1 cup all-purpose flour

- 1 teaspoon baking powder

- 1/4 teaspoon salt

- 1/2 cup unsalted butter, softened

- 1 cup granulated sugar

- 4 eggs

- 1/2 cup coconut milk

- 1 teaspoon pandan extract (you can find this in Asian grocery stores)

- green food coloring (optional)


1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan and set aside.

2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3. In a large mixing bowl, cream the butter and sugar together until light and fluffy.

4. Add the eggs, one at a time, beating well after each addition.

5. Mix in the pandan extract to the coconut milk. If desired, add a few drops of green food coloring to enhance the color.

6. Alternately add the flour mixture and the coconut milk mixture to the butter mixture, beginning and ending with the flour mixture. Mix well after each addition.

7. Pour the batter into the prepared cake pan and smooth the top with a spatula.

8. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

9. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before serving.

Optional: You can frost the cooled pandan cake with cream cheese frosting or dust it with powdered sugar for added sweetness.
