How to make Pineapple tarts

Ingredients:

For the pineapple filling:

- 4 cups fresh pineapple chunks 

- 1 cup granulated sugar

- 1/2 teaspoon cinnamon powder

- 1/2 teaspoon vanilla extract


For the tart dough:

- 4 cups all-purpose flour

- 1cup unsalted butter, softened

- 1/2 cup powdered sugar

- 2 egg yolk

- 1 teaspoon vanilla extract


For assembly:

- 1 egg (lightly beaten, for egg wash)

- Pineapple jam (optional, for extra filling)


Instructions:

1. Start by making the pineapple filling. In a blender or food processor, blend the pineapple chunks until smooth.


2. Transfer the blended pineapple to a saucepan and add sugar, cinnamon powder, and vanilla extract. Cook over medium heat, stirring occasionally, until the mixture thickens and turns into a jam-like consistency. This process usually takes about 30-40 minutes. Allow the filling to cool completely before using.


3. Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.


4. In a mixing bowl, cream together softened butter and powdered sugar until light and fluffy. Then, add the egg yolk and vanilla extract and mix until well combined.


5. Gradually add the all-purpose flour to the butter mixture, mixing until it forms a soft dough. If the dough is too dry, you can add a tablespoon of water to bring it together.


6. Roll the tart dough into small balls, about 1-inch in diameter. Flatten each ball with the palm of your hand or using a tart mold. Place a small amount of pineapple jam (if desired) onto each flattened dough disc, and top with around 1/2 teaspoon of the pineapple filling.


7. Alternatively, you can shape the dough into small cylinders and fill them accordingly.


8. Brush the tart tops with beaten egg wash, which will give them a beautiful golden color when baked.


9. Bake the pineapple tarts in the preheated oven for about 15-18 minutes or until the edges turn lightly golden.


10. Once baked, remove the tarts from the oven and allow them to cool on a wire rack before storing in an airtight container.
